Tiramisu is my favorite dessert ( I say that a lot about a lot of dessert I know ).
It is no secret that I love coffee, and I could eat mascarpone with a little spoon which makes this dessert my soulmate? This recipe is a heirloom of my sister’s family and I love it dearly. It is perfectly balanced, the texture is incredible. I do not add the amaretto simply because I do not drink alcohol ( and I am always pregnant or breastfeeding ) but you could add a little bit of amaretto ( almond liquor ) for a traditional Tiramisu.
Tiramisu Di Nonna
Ingredients
500g mascarpone
4 egg whites
3 big spoons white sugar
a little bit of milk
a double shot of espresso
a little bit of milk
savoiardi ( tiramisu biscuits )
a pinch of salt
some good quality cacao
amaretto ( optional )
Method
In a bowl, warm up the mascarpone gently with a spatula or a wooden spoon. Add the white sugar.
In a another bowl, mount your egg whites with a pinch of salt until stiff.
Slowly incorporate the egg whites to the mascarpone, making sure that it remains airy and light. Keep it in the fridge.
Make a double shot of espresso ( the better the coffee, the better the tiramisu ) and add a dash of milk. You might need to add a little bit of hot water if it is not enough, depending on how wet you like your tiramisu ( I personnaly think that it should not be too dry but I do not want it to bathe in coffee juice either ).
Take your tiramisu mold, dip your savoiardi in the coffee, gently press them on a wet towel to release some moisture and place them in the mold. I like to do : one layer of biscuits, one layer of mascarpone, one layer of biscuits, one layer of mascarpone.
Smooth the last layer of mascarpone, place a towel on your tiramisu and put in the fridge overnight.
When serving the next day, you can add the cacao, again, I recommend using good quality cacao, it really makes all the difference!
