I know that everyone calls their cookies recipe “the best cookies they ever had”, but it’s because they haven’t had this one!
I spend a lot of time eating cookies, I eat cookies daily, I have tried so many different versions.
My fav are, praline cookies from Cédric Grolet and cookies from Laura Todd which is a chain that sells cookies in Paris, the whole store smells like hot chocolate and melted butter and the cookies are absolutely delicious.
I do not know if those cookies still exist, I had them a long time ago but I think about them once a week at least.
Anyways, I love cookies, these are delicious. You should try this recipe, it’s perfect.
Chocolate & Hazelnuts Cookies :
( about 12 medium-small cookies )
115g unsalted butter
110g caster sugar
75g brown sugar
1 egg
a pinch of salt
180g all purpose flour
100g melted chocolate
hazelnuts ( about a small cup )
Melt the chocolate.
Mix all the ingredients together without the hazelnuts until you get that cookie dough texture. ( might be even smoother especially if you use a stand mixer like I do ). Add the melted chocolate.
Chop the hazelnuts ( not too small ) and incorporate them to the dough.
Let the cookie dough rest in the fridge for at least 2 hours to overnight ( the dough is quite liquid so it will need that time to harden, if you skip that part, they will come out a little too flat and thin ).
Bake in the oven at 200 degrees celsius for 11 minutes ( or until slightly golden and evenly baked ).
The secret to have round and perfect cookies is to take a round form and shape them with it while they are out of the oven. You need to be very quick. There is a lot of videos showing this technique online that will explain it a bit better!
