This is my newest obsession.
These scones are perfect, flakey, buttery, just the right amount of sweetness.
Cherry Scones :
( for 8 small-ish scones )
Ingredients :
210g all purpose flour
115g unsalted butter ( very cold )
30g white sugar
150g buttermilk
1/2 tsp baking powder
a small handful of cherries
a pinch of salt
brown sugar
Method :
To a bowl, add the flour, sugar, salt and baking powder.
Take your butter out of the fridge last minute ( I like to cut mine in small dice and put it the freezer for a couple minutes ) and add it to the flour mixture.
Gently press on the butter with your fingers to incorporate it to the dough. Don’t overdo it!
Add the buttermilk and give it a rough mix, you can either use your hands or a fork.
Wash, pit and slice your cherries in half. Incorporate them to the dough, again, do not overwork the dough, it should be uneven and not too smooth.
Roll the dough in a ball then put it on a floured surface, pat it down with your fingers to make it into a disk, evenly cut the dough into 8 little scones.
Add the scones to a baking sheet, brush with some buttermilk, sprinkle some brown sugar on top ( very important step ).
Bake at 190 degrees celsius for 25-30 minutes or until golden.
