I love simple meals, if you follow me on other socials then you probably know that already.
I can enjoy a fancy meal too but when it comes to my kitchen I really like my food comforting, and I find comfort in the familiar.
This meal is toddler friendly, my 20 months old is crazy about it ( the trick is to crush the broccoli )
I usually always measure with my heart ( and eyes ) feel free to adapt this recipe and make it yours, cooking is very forgiving ( unlike baking ). I did weigh my ingredients to write this recipe tho!!
Broccoli Cheddar Pasta
125g cheddar
300g pasta
the head of a broccoli medium sizes
salt & pepper
start by cooking the broccoli ( I cook it in water, you could also roast it in the oven for a little bit more flavor )
for the béchamel
65g unsalted butter
50g flour
150g milk
garlic powder
nutmeg
salt & pepper
melt the butter in a small pot on low heat
add the flour until it thickens and turns into a paste
keep stirring, the secret is to keep stirring
add the milk slowly and off the heat, until it gets to a thicker consistency
add nutmeg, garlic powder, salt & pepper
cook the pasta
add them to a pot
pour the béchamel in and the shredded cheddar
allow to melt on low heat
add salt and pepper if needed
