What screams summer more than a juicy apricot, that you split open with your fingers? I grew up in the South of France and let me tell you, I had some delicious apricots. I miss those apricots. Unfortunately I am currently living in a small village in Germany and the local supermarket has not provided me with a single good apricot so far. But one way that I found to still enjoy this fruit this summer, is to bake with it. When I am dealing with unripe or flavorless fruits, I bake them. ( that sounds like a threat, but it’s a good threat, I promise. )
Ingredients :
6-7 apricots
brown sugar
a vanilla pod ( or vanilla paste )
190g all purpose flour
20g white sugar
140g unsalted butter ( cold )
60g cold water
a pinch of salt
about 30g of almond flour
flaked almonds
1 egg ( to brush )
Recipe :
Make the flakey crust, in a bowl add the flour, the white sugar, a pinch of salt, the cold diced butter and start working with the dough. Add the cold water, form a ball and put it in the fridge.
Wash, pit and slice the apricots, add them to a bowl with 2 big spoons of brown sugar, the vanilla and the almond flour. Let that sit for a while to allow the fruits to macerate.
After a while, take the dough out of the fridge, spread it on a floured surface and flatten it. It really does not need to be a perfect round, just try to roll it as thin as possible.
Prick holes with a fork, add your apricots on the middle of the dough and fold the sides on the fruits to shape your galette.
Make an egg wash and brush your galette, add some brown sugar and flaked almonds ( honestly this is a very important step don’t skip it, at least add the brown sugar ok? )
Bake for about 25 minutes in an oven at 190 degrees celsius.
